
Preheat oven 375
Dry Ingredients
- 5c flour
- 2 tsp baking soda
- 2 tsp baking powder
- 2 tsp nutmeg
- 2 tsp cinnamon
- 1 tsp salt
Wet Ingredients
- 1c oil
- 3c sugar
- 2 eggs
- 2 tsp vanilla
- 1 Lg. can of pumpkin
- 2c semi-sweet chocolate chips
Mix dry ingredients in large bowl and set aside.
In a mixer, Mix oil, sugar, eggs, vanilla, and beat well.
Add a little Flour mixture. mix.
Add a couple scoops of pumpkin. mix well.
Alternate between pumpkin and flour mixture as above until all incorporated.
Fold in chocolate chips.
Drop with medium scooper (my fave) on greased cookie sheet (batter is very wet)
Bake for 9-10 minutes. Makes about 100. They freeze well and also stay moist in ziplock bags.
